OPTIMASI pH DAN SUHU HIDROLISIS SUKROSA DENGAN ENZIM INVERTASE PADA PEMBUATAN SIRUP INVERT

Abstract


Abstract: In the effort of producing invert sugar from sucrose using enzyme, has been optimized an invertase by pH and temperature variation in the definite time of incubation (120 minutes). This study has been done in Pusat Penelitian Perkebunan Gula Indonesia (P3GI) Pasuruan and has the goals of to know 1) the optimum pH and temperature of incubation, and 2) spesific activity of the enzyme. The result has shown, that 1) the optimum pH and temperature incubation are 5 and 60 °C respectively, in this optimum condition the enzyme able to convert 50.31% of sucrose to invert sugar in 120 minutes, and 2) the spesific activity of the enzyme in optimum condition is 54.04 unit/mg solid.
